Spectrum on One

Within the Fairmont hotel in Dubai is the impressive Spectrum on One restaurant. It's more than a restaurant though, it's more like six! With eight kitchens producing fantastic cuisine in the styles of China, Japan, Thailand, India, Europe and the Middle East, there is plenty of creative inspiration amongst the chefs here. There is also a choice of spaces to be seated so you can have the perfect atmospheric dining experience. There's the lively showcase restaurant where you can spot out other socialites, or you can enjoy the intimacy of a much smaller dining room for that romantic evening or delicate business deal.

Their brunch menu, hosted on Fridays, is one of their specialties. They offer four set options for guests to polish off; the non alcoholic brunch, the premium bubbly brunch, the pink champagne brunch, and the hops and vines brunch. All these offer exquisite selections from the delicatessen room, the juice bar, the ice bar with freshly shucked oysters and all kinds of seafood, as well as some traditional roasts and a popular Peking duck.

The dress code here is business and smart casual.
